Are all products gluten-free and casein-free?
Everything we sell is gluten-free. Nothing that we sell or make in our bakery contains gluten. Unless otherwise noted, all bakery products do not contain any casein (milk or milk products). We do have milk available for coffee.
What makes our products gluten-free?
Gluten is a protein that is found in wheat, barley and rye. None of our products contain gluten and there is nothing made in our bakery that uses wheat, barley or rye. Our recipes use our own special blend of flours that are made from rice, potatoes, sorghum, tapioca and other gluten-free grains and starches.
Who needs gluten-free products and why?
People affected by the Celiac disease cannot consume food containing any amount of gluten. There are also those who have trouble digesting gluten and are considered gluten-intolerant or have a sensitivity to gluten foods. Individuals with autism spectrum disorders (ASD) may exhibit low tolerance or allergies to certain foods or chemicals. While not a specific cause of autism, these food intolerances or allergies may contribute to behavioral issues. Many parents and professionals have reported significant changes when gluten and casein are eliminated from the child’s diet.[1]
What is Celiac?
Celiac disease is an autoimmune digestive disease that damages the villi of the small intestine and interferes with absorption of nutrients from food. What does this mean? Essentially the body is attacking itself every time a person with celiac consumes gluten. It is estimated that three million Americans have celiac disease.[2]
What does casein-free mean?
Casein is a protein that is found in milk and milk products, including cheese and yogurt. Casein-free foods (and its ingredients) do not contain any milk, milk products. Casein-free is the same as dairy-free. Please note that dairy-free is not the same as egg-free. Casein-free products may include eggs.
Why do people need casein-free foods?

What is Lactose Intolerance?
Lactose intolerance is the inability or insufficient ability to digest lactose, a sugar found in milk and milk products.[3] Between 30 and 50 million Americans are lactose intolerant.[4]
